According to Barry Schwartz at SEO Roundtable, Google is now letting SMBs define their own categories in the Local Business Center.
To some degree this is an adaptation to reality — not everyone fits into the pre-defined, structured headings provided. But it also appears to be a way to accomodate an increasingly specific body of queries, the so-called long-tail, as people doing local searches eventually move from categories to questions.
